I like travelling *in depth*. So that I prefer having a local friend being my tour guide rather than one assigned by a tour agency.
Is that how people put it?

I haven't heard it put like that . Some people say they like to get to know the people. Or they like to travel off the beaten track.

To do something in depth means to do something thoroughly, comprehensively, and in great detail. So, if by travelling you mean exploring thoroughly the countries you visit, then you can say you do it in depth.
