As you know, start looking for a job and then get your letter of release. I would worry about taxes, pension and medical insurance at a later time. First, get yourself a job. You can only fry so many fish at once. A letter of release is the same as your employer cancelling your visa. However, this isn't always the case. It depends on which immigration officer you're dealing with and what "inner office policy" they're going to enforce. Make a photo-copy of your letter of release. Present that to the immigration officer and keep the original one. The immigration officer may want to see the original letter of release, so be prepared to let him or her see it. On to your other concerns. Once you get a job, file a complaint at the pension office, tax office, and National Health Insurance Corporation (medical insurance). |

So, if in effect, it is cancelling my visa, I can do a visa run to Japan for my new employer and the clock starts over again, right? |

There are some immigration officers that may not budge and require your employer to cancel your visa. So, it depends on the immigration officer your dealing with. Also, it's not all the same in every immigration office. Once your visa is cancelled, immigration officials will issue you what's called an "exit order" of 14 days. If you're still in Korea after 14 days, you'll have to pay overstay fines. You will have to do another visa run to Japan. Yes, and the clock starts over again.
There's also good advice on this thread as well;
