I recently interviewed at a company for a part time position. But they've never sponsored a work visa before and are unsure whether they are eligible to do so...

When can a company sponsor a visa and what is involved?

Wouldn't it be much easier for the company to just ask immigration rather than go through people who, almost certainly, have no real experience in this matter? Nah, let's ask a bunch of people who aren't involved instead of the people actually doing the work at the local immigration office.

It depends on the nature of the work.

If you mean hire a teacher (E2) then it is well documented.

If you mean something else (E7) then it is case dependent but basically involves applying for permission (labor and immigration) to hire a foreigner (by showing that they cannot find a Korean person who is able to do the job).
