I don't know about specific store brands (since we mostly eat only MIL's version) but if we're talking baechu kimchi, I only like the really fresh kind, where it's still relatively white, crisp and tangy and doesn't have that old fish smell orangeyness to it. |

I find any kimchi I've had that's made its way up from Kwangju has been the knees of the bees'... Lots of flavour and red stuff, but relatively little fishy/shrimpy taste... semi-crispy, too.
That said, the kimchi at that samgyupsal place across from the old Hodgepodge just OWNS... Anyone concur? |

ponytail (radish) kimchi or chongak kimchi. I also like kakdugi (cubed radish kimchi).
I agree with zyzyfer too. Fry it up in grease. Yum! The older the better.
E-Mart has pretty good kimchi, but it's so much better if you can find someone who makes it. It's so pricey! |

My wife's is the best bar none. Fresh as it comes with lots of ginger and garlic.
Except that, I always liked HomePlus kimchi. |

Any kimchi that doesn't taste like perfume is good for me. In fact, I even find myself taking seconds of the perfume-tasting stuff, too.
I'm an addict.
I would like to create psychedelic kimchi. If there is any food that should induce hallucinations, it's the 'chi.
