(2) Would you care for any coffee?

Do you find any differences between (1) and (2)?

It's more polite to offer something to someone with "some". The reason is simple. When you use ask with some (something, someone, somewhere) you suggest that you expect an affirmative answer. Therefore it's more polite.

No, number two would not be impolite. It could be less polite or less correct or simply the normal way that this person speaks.

If an offer is sincere it is transmitted by one's tone of voice, facial expressions and body language. We can't judge only from one's choice of words.
